Cassoulet Wars 2021

Several years ago we did a taste-testing of several cassoulet recipes, ranging from Julia Child’s 3-day version, to Paula Wolfert’s 2-day version, to the incredibly time consuming cassoulet made with fresh fava beans (which had to individually be peeled), to cassoulet made with D’Artagnan’s recipe and products. Fortunately, we found the D’Artagnan recipe tasted the best and was by far the easiest (and quickest) to make.

So we were happy to participate in D’Argagnan’s Cassoulet Wars 2021 with Tom Collichio, Eric Ripert, Danial Boulud. My votes: duck confit, garlic sausage, a little tomato paste, tarbais beans, duck fat, veal glace.
